Baked Penne Rigate with Cheese and Smoked Cheese

 Ingredients: 400 g penne rigate, 500 ml milk, 200 g cheese, 100 g telemea cheese, 40 g flour (which is 1 tablespoon), 25 g butter, salt, pepper

Preparation:

1. We start by melting the butter in a medium-sized saucepan over low heat. It is important not to let the butter burn, so we make sure to stir constantly. Once the butter has completely melted, we add the flour. This will form a roux, which will give our sauce consistency. We continue to stir with a whisk until the flour becomes slightly golden, being careful not to rush.

2. Once the roux is ready, we begin to gradually add the milk. It is essential to stir continuously to avoid lumps forming. We will notice how the sauce begins to thicken as we add the milk. After the sauce has reached a creamy consistency, we add the 100 grams of grated cheese and the telemea cheese, which we can grate for better integration. We stir until the cheeses are completely melted, and the sauce becomes homogeneous. Finally, we season with salt and pepper to taste, being careful not to overdo it, as the telemea cheese is already salty.

3. Meanwhile, we boil the penne according to the package instructions, usually between 9 and 11 minutes, until al dente. After the penne is cooked, we drain it well and let it cool slightly. In a buttered baking dish, we add the drained penne and distribute it evenly.

4. We pour the cheese sauce over the pasta, ensuring that each penne is well covered. This creamy sauce will make every bite a true delicacy. On top of the sauce, we sprinkle the remaining grated cheese, and finally, we add small cubes of butter here and there for extra flavor and a golden crust.

5. We place the dish in the preheated oven at 180 degrees Celsius and let it bake for about 20-25 minutes, or until the surface becomes golden and crispy. The flavors will blend, and the entire room will be filled with a delicious aroma.

6. Finally, we take the dish out of the oven and let it cool for a few minutes before portioning. These baked penne can be served hot or cold, making them a perfect choice for a family dinner or a packed lunch.
