Chocolate Cream Cake
To prepare this delicious cake, we will start by creating both the cream and the base simultaneously, using a mix of ingredients that will combine perfectly. The first step is to take a pot in which we will add sugar, vanilla sugar, and milk. These ingredients will be mixed well, then placed over low heat, stirring constantly, until the mixture becomes homogeneous and thickens slightly. This process will take a few minutes, and the flavors will begin to intensify. Once the mixture is ready, we will let it cool slightly, after which we will add the egg yolks, one at a time, mixing well after each addition. The egg whites need to be separated, and for this recipe, we will use 4 egg whites.
After we finish with the egg yolks, the obtained mixture will be divided into three equal parts: two parts will be used for the base, and one will be reserved for the cream. Now we focus on the delicious cream. We will take the portion intended for the cream, put it back on low heat, and add the diced butter, cocoa, vanilla sugar, and rum essence. We continue to stir gently until the butter completely melts, and the mixture becomes homogeneous and thickens. Once the cream is ready, we let it cool.
Now let's take care of the bases. The egg whites we separated earlier will be whipped with a little salt until they become firm and shiny. Then, this foam will be gently incorporated into one of the portions of the mixture, stirring from the bottom up, so as not to lose the air from the egg whites. After mixing well, we add 2 tablespoons of flour mixed with half a packet of baking powder, continuing to stir gently.
The resulting mixture will be poured into a buttered and floured baking tray, and it will be placed in the preheated oven at a moderate temperature. The base will bake for about 35 minutes, or until a toothpick inserted in the middle comes out clean. After the first base is baked, we take it out of the oven and let it cool on a rack. We will repeat the same steps for the second base.
Once both bases have cooled, we will add the delicious cream over the first base, spreading it evenly. Then, we carefully place the second base on top, making sure it sits well. This cake will be a real delight, and the layers of cream and base will create a perfect contrast of textures and flavors. We finish the cake with a dusting of cocoa or a chocolate glaze, as preferred, and let it chill in the fridge for a few hours to set slightly.
