Fake soup

 Ingredients: Necessary for 3 liters of soup: 3 medium-sized carrots, 1 onion, 5-6 medium-sized potatoes, 1 parsley root, 2 celery leaf stalks, 1 teaspoon paprika, optional pepper paste, 3 tablespoons oil, salt, Delikat seasoning, or noodles without egg.

To prepare a delicious and comforting soup, we start by ensuring that all ingredients are fresh and ready for cooking. The carrots and parsley are carefully peeled, removing the skin, then sliced thinly so they cook evenly and release their aroma into the soup. Onion is an essential ingredient that will add a special flavor, so we grate it finely to soften it more quickly in the oil.

In a large pot, we add 3 tablespoons of oil and, over medium heat, add the grated onion. We sauté it gently, being careful not to burn it, just until it becomes translucent. Once the onion has released its aroma, we add a teaspoon of paprika, which will bring a hint of color and a slightly smoky flavor. It’s time to add the sliced carrots and parsley, mixing everything together and allowing the vegetables to sauté a bit until they start to soften, about 5-7 minutes.

After the vegetables have sautéed, we pour about 4 liters of water into the pot and let it reach boiling point. At this moment, we season the soup with salt and Delikat to give it a savory taste. In the meantime, we take care of the potatoes: we peel and cube them small so they cook quickly and evenly.

When the carrots have been boiling for more than half the time and the aroma of the soup delights our senses, we add the potatoes to the pot. We continue to boil the soup, stirring occasionally, until the potatoes become soft. If we wish, we can also add noodles or egg-free pasta, but we must remember to add them to the soup only when the potatoes are nearly cooked. This step will ensure that the noodles do not get too soft and retain their pleasant texture.

When the soup is ready, we serve it hot, sprinkled with chopped fresh parsley, which will add a note of freshness. For those who prefer a spicier taste, we can also add a hot pepper on the side to intensify the flavors. In my case, I chose to simplify the recipe and omitted the noodles, believing that sometimes simplicity is key. In conclusion, this vegetable soup is not only nutritious but also comforting, perfect for chilly days.
