Apricot Jam Popover

 Ingredients: 40 g butter, 70 g flour, 1 heaping tablespoon of thick sour cream, 2 large eggs, 2 tablespoons of sugar, a pinch of salt, 110-120 ml of milk (depending on the flour you use), apricot jam, powdered sugar

The oven is preheated to a high temperature of 420°F or 200°C to ensure even and quick baking. We start by choosing an 8-inch (approximately 20 cm) non-stick pan, ideal for achieving a perfect popover. In this pan, we melt the butter over medium heat, being careful not to let it burn, as the flavor of melted butter is essential for the final taste of the dish.

In a large bowl, we crack the eggs and mix them well. We add the cream, which will give an extra creaminess, and homogenize the mixture. Next, we sift the flour to avoid lumps and gradually incorporate it, stirring constantly to obtain a smooth batter. Then, we add the sugar, which will add sweetness, a pinch of salt to balance the flavors, and the milk, mixing again. The final consistency of the batter should be similar to that of pancake batter, perhaps a little thicker. It is important to respect the amounts of milk mentioned in the recipe to not compromise the texture.

From the melted butter in the pan, we take 1-2 teaspoons and add them to the flour and egg mixture, mixing well to integrate the ingredients. Then, we pour this mixture over the remaining melted butter in the pan, being careful to cover the bottom of the pan well. Now it’s time to place the pan in the preheated oven, letting it bake on the top rack for about 20 minutes.

If we notice that the edges are baking too quickly, we can cover the pan with aluminum foil to prevent burning. We continue baking until the center is fully cooked and the popover has risen beautifully. If there is excess butter, we can absorb it with a napkin. Once done, we carefully detach the popover from the sides of the pan and transfer it to a plate.

To serve, we can spread the popover with our favorite jam or cream and dust it with powdered sugar for an attractive appearance. It is a versatile dish, perfect for both breakfast and dessert. If you want a popover with a fresh lemon flavor, add the grated zest and juice of a lemon to the batter before baking. Slice it like a cake and enjoy, providing an unforgettable culinary experience!
