Dandelion

 Ingredients: 300 freshly picked dandelion flowers, 1 l of cold water, 750 g of sugar, 1 lemon

To prepare a delicious dandelion flower syrup, it is essential to start by choosing the most beautiful flowers, preferably those picked in the morning when the dew is still on them. After washing the flowers, place them in a pot with one liter of water. Bring the water to a boil, and once it reaches boiling point, let the flowers simmer on low heat for about 10 minutes. The next day, carefully strain the obtained liquid using a fine sieve or cheesecloth to remove the flowers. The resulting liquid is the base of your syrup. Add sugar to this juice, adjusting the amount to taste, and bring everything to a boil again. Stir constantly to prevent the sugar from caramelizing.

Once the mixture starts to boil, cut a lemon into small cubes, keeping the peel, as this will add a pleasant bitterness to the syrup. Add the lemon cubes to the mixture and let everything boil. The syrup will boil until the consistency becomes slightly softer than honey. It is important to stir periodically to ensure that it does not stick to the bottom of the pot.

When the syrup is ready, let it cool slightly. After it has cooled, carefully pour it into sterilized jars, making sure they are airtight. Store the jars in the refrigerator, where the syrup will retain its flavor and properties for a long time.

This dandelion flower syrup is not only a delicacy but also a natural remedy. It can be used both as a jam and as a syrup for various drinks or desserts.
