Garganelli (pasta) with Mushrooms

To prepare a delicious pasta and mushroom dish, start by carefully cleaning the mushrooms. Remove any impurities and then cut them into quarters lengthwise to give them a pleasant texture and attractive presentation. In a large pot, add a generous amount of butter, about 50 grams, and place the sliced mushrooms alongside a whole clove of garlic, which will infuse the dish with its unmistakable aroma. Add a teaspoon of salt to draw out the juices from the mushrooms and help them soften evenly. After a few minutes of cooking over medium heat, you can splash in a little white wine, although this step is optional. The wine will add a note of acidity and intensify the flavors.

When the mushrooms become tender and release their juices, it’s time to add the tomatoes. If you’re using fresh tomatoes, score them slightly to release their aroma, and if you choose canned ones, make sure they are of good quality and in broth. Also, add a few stems of parsley without leaves, which will contribute extra flavor to the sauce. Cover the pot and let the sauce simmer on very low heat, so the flavors can combine harmoniously.

In the meantime, bring water to a boil for the pasta. When the water reaches boiling point, add salt and toss the pasta in. If you’re using dried pasta, follow the cooking instructions on the package for the boiling time. If you opt for fresh pasta, wait until the mushroom sauce is finished cooking, as the cooking time is much shorter, about one minute. Ensure that the mushroom sauce reduces well to concentrate the flavors.

Once the sauce has reached the desired consistency, remove the garlic clove and the parsley stems. Add freshly ground pepper and finely chopped green parsley leaves. Then, drain the pasta and mix it with the mushroom sauce, adding 1-2 tablespoons of grated Parmesan cheese. Mix everything well so that each strand of pasta is coated with the delicious sauce. If you desire an extra burst of flavor, you can add more Parmesan, either in the cooking pot or directly on the plate when serving.
