Lentil Cream Soup

 Ingredients: * 200 grams of lentils * half an onion * celery * 1 carrot * 2 tomatoes * 1 bell pepper * a stalk of celery * olive oil * fresh parsley * salt, pepper, and paprika

To prepare a delicious and nutritious lentil soup, we start by cleaning all the vegetables we will use. We choose carrots, celery, bell peppers, and onions, each bringing a distinct flavor to our dish. After cleaning them, we cut them into small pieces, making sure they are uniform so they cook evenly. We leave the tomatoes whole for now, planning to add them later.

In a large pot, we place the chopped vegetables along with the lentils, which are an excellent source of plant protein. We add 2 tablespoons of olive oil, an ingredient that will add a splash of flavor and help caramelize the ingredients. We fill the pot with water until all the ingredients are completely covered and bring everything to a boil over medium heat.

Once the vegetables have started to boil and have softened, about 20 minutes, it’s time to deal with the tomatoes. We grate them, obtaining a fine puree, which we will add to the pot. This will enrich the soup with a perfectly balanced sweet and sour taste. We season with salt, pepper, and a teaspoon of sweet paprika, which will add color and flavor.

We let everything boil for another 15 minutes, stirring occasionally to prevent the ingredients from sticking to the bottom of the pot. At the end of this period, we take the pot off the heat and let it cool slightly. Then, using a blender, we mix the soup until we achieve a creamy and homogeneous consistency, which will be very pleasant to taste.

For an extra texture, we can add some roasted sunflower seeds, which will provide a crunchy contrast. Finally, don’t forget to sprinkle finely chopped fresh parsley on top, which will bring a touch of freshness and color to our dish.

So, the lentil soup is ready! Serve it warm, alongside a slice of fresh bread, and enjoy a healthy and tasty dish. Bon appétit!
