The history of wafer cakes dates back centuries, symbolizing homemade sweets filled with love and creativity. These cakes are often associated with pleasant childhood memories when grandmothers prepared these little delights for the entire family. So, let’s get to work!
Ingredients:
- 1 package of wafers (5 sheets)
- 400 g cocoa biscuits
- 200 g ground walnuts
- 300 g raw sugar
- 200 g butter
- 50 g cocoa powder
- 400 ml sweet milk
- 3 tablespoons rum (or brandy)
- 50 g coconut
- 100 g ground almonds
Preparation:
1. Preparing the cocoa cream: In a saucepan, add the sugar, cocoa, and 200 ml of sweet milk. Bring the mixture to a boil, stirring constantly to dissolve the sugar. Once the sugar has completely melted, remove the pot from the heat.
2. Adding the butter: Add the diced butter to the warm cocoa mixture. Mix well until the butter completely melts, creating a smooth and aromatic emulsion.
3. Flavoring the cream: At this stage, add the 3 tablespoons of rum or brandy to enhance the flavor of the cream. Mix well and let the mixture cool slightly.
4. Grinding the biscuits and walnuts: Using a blender or food processor, grind the cocoa biscuits and walnuts. It is important to achieve a fine consistency for better integration into the cream. Reserve a few tablespoons of the biscuit and walnut mixture for final decoration.
5. Combining the ingredients: In a large bowl, combine the biscuit and walnut mixture with the cocoa cream. Add the coconut for extra texture and flavor. If the mixture is too thick, thin it out with the remaining sweet milk. Mix everything well until you obtain a smooth cream.
6. Assembling the cake: Choose a suitable tray and start layering the wafers. Spread a thin layer of cocoa cream between each wafer sheet. The last sheet will be covered with the remaining cream, and on top, add the mixture of biscuits, walnuts, and almonds for a decorative touch.
7. Pressing the cake: Place a wooden board or tray on top of the cake to press it evenly. This step is essential for achieving a well-compacted cake that is easy to cut.
8. Cooling: Place the cake in the refrigerator for at least 4 hours, but ideally, leave it overnight. This cooling time allows the flavors to blend perfectly and makes the cake easier to portion.
9. Serving: Once the cake has cooled and set, remove it from the refrigerator and cut it into servings. If desired, you can glaze it with melted chocolate or leave it plain, sprinkled with the biscuit and walnut mixture.
Useful tips:
- If you want to experiment, you can add chestnut puree to the cream, giving it a unique taste and texture.
- The cake pairs perfectly with vanilla ice cream or aromatic coffee, which will complement the intense flavors of the cocoa cream.
- You can also use different nuts, such as hazelnuts or pistachios, to vary the cake's flavor.
