Chocolate Cheesecake
I know there are many variations of cheesecake, but the recipe I will present today is truly special. It is a delicious combination of classic cheesecake with a chocolate mousse topping, which gives it an intense flavor and creaminess. I recommend using Oreo cookies for the crust base, but you can also opt for digestive biscuits if you prefer a different taste.
The first step is to prepare the crust. Start by crushing the cookies in a blender until they become a fine powder. Add the sugar and melted butter and mix everything well so that the mixture becomes homogeneous. Then, take a springform pan and line the bottom with the cookie mixture, pressing well to form an even crust. Bake the crust in a preheated oven at 180 degrees Celsius for about 10 minutes, then let it cool completely.
For the cheesecake filling, mix the mascarpone with the cream cheese, vanilla extract, lemon juice, flour, and sugar. Use a mixer to achieve a smooth and homogeneous cream. Add the eggs one at a time, mixing well after each to ensure they integrate perfectly into the mixture. Finally, fold in the chocolate chips, which will add texture and extra flavor. Pour this cream over the cookie crust and bake everything in the oven for 50 minutes, until the cheesecake sets.
While the cheesecake is baking, you can prepare the chocolate mousse. In a saucepan, add the heavy cream and sugar, placing it over medium heat. Stir until the sugar completely dissolves, then add the chopped chocolate and rum, continuing to stir until you achieve a homogeneous mixture. Finally, fold in the cocoa powder using a whisk, ensuring there are no lumps.
Once the cheesecake is nearly baked, pour the chocolate mousse on top and let it bake for another 10 minutes. This will create a fine and creamy mousse layer that will perfectly complement the cheesecake. Once finished, let the cheesecake cool in the oven until it reaches room temperature, then refrigerate it for a minimum of 4 hours, so it sets well.
