Preparation:

1. Caramelizing the Sugar: Start by caramelizing the 2 tablespoons of sugar. Place the sugar in a small saucepan over medium heat, stirring constantly until it turns golden. Once the sugar has caramelized, remove the saucepan from heat and carefully add a little cold water (be careful, steam will form!). Let the mixture cool until the caramel dissolves completely.

2. Preparing the Base: In a large bowl, beat the egg whites with a pinch of salt until stiff peaks form, then add the 6 tablespoons of sugar and continue mixing until you achieve a glossy meringue. 8. Preparing the Fondant: For the fondant, bring water and sugar to a boil. When the mixture reaches a syrup consistency, add the honey and let it boil for a few minutes. Check the consistency by dropping a few drops into cold water. If a pearl forms, it’s ready. Transfer the mixture to a bowl of cold water and stir with a wooden spoon until it whitens. Add the grated chocolate and mix until homogeneous.

9. Finalizing the Cake: Remove the cake from the refrigerator and cut it into cubes. Pour the warm fondant over each cube and decorate as desired.
