Gazpacho
Ingredients: 800 g tomatoes, one capia pepper, one yellow bell pepper, one red bell pepper, half a head of garlic (about 7 cloves), one red onion, plenty of fresh parsley, fresh basil (30 g), one tablespoon of vinegar, salt. The original recipe also mentions cucumbers and chili peppers, but I didn't have cucumbers and didn't want to add chili peppers.
To create a delicious and flavorful recipe, we start by preparing all the necessary ingredients. First, we will focus on the vegetables. Choose the freshest vegetables you have on hand; tomatoes, bell peppers, carrots, and onions are excellent options. Cut the vegetables into small cubes, ensuring they are of uniform size to facilitate the mixing process. Once chopped, transfer them to a large bowl.
Using a blender with blades, start blending the vegetables. It is important to mix them well until you obtain a smooth and homogeneous paste. This is the moment when the flavors combine perfectly, resulting in a tasty base for your dish. If you desire a finer texture, you can add a little water, but be careful not to dilute the mixture too much.
After obtaining a consistent paste, it's time to add the herbs. Parsley and dill are excellent choices, but you can also experiment with basil or cilantro, depending on your personal preferences. Chopping the herbs with a knife, cut them into small pieces, then add them to the bowl with the vegetable paste. Use the blender again to mix the herbs with the red mixture, ensuring that the flavors integrate harmoniously.
Once you have a uniform mixture, add the salt and vinegar. These will enhance the flavors and provide a note of freshness to the dish. If you wish, you can also add pepper, but I prefer to keep the strong flavor of garlic, which is optional but highly recommended. A well-crushed clove of garlic will add extra flavor.
Mix all the ingredients with a wooden spatula, ensuring that the salt and vinegar are evenly distributed. At this point, the mixture is ready to be used as a base for various dishes, whether you want to use it as a sauce for pasta, to accompany meat, or simply as a dip for fresh vegetables. This simple and quick recipe will add color and taste to your meal, and the final result will surely be appreciated by everyone around. Enjoy every bite!
