Pasta with Peas, Ham and Carrots

 Ingredients: -500g pasta -1 small white onion -1 small red onion -150g peas -250g smoked bacon / pancetta -1 carrot -olive oil -cheese -salt -pepper -bay leaf

Pasta is a versatile and delicious dish, perfect for any occasion. We start by boiling the pasta according to the instructions on the package, choosing the preferred type – whether spaghetti, penne, or fusilli. Make sure to cook them al dente to retain the pleasant texture. While the pasta is boiling, we will focus on preparing a flavorful sauce that will transform this dish into a true delicacy.

In a large skillet, add a few tablespoons of high-quality olive oil and place it over medium heat to warm up. The olive oil will not only provide a special taste but will also help in cooking the vegetables. Once the oil is hot, add the finely chopped onion. It will take on a golden color and a tempting aroma in a few minutes. After about a minute, add the carrot, diced or thinly sliced, to fry evenly.

Let the two ingredients fry together for a few minutes, stirring occasionally, until the onion becomes translucent and the carrot starts to soften. Then, add the diced or chopped bacon. This will add extra flavor and an umami taste, perfect for complementing the sauce. After 2-3 minutes, when the bacon starts to brown slightly, pour a cup of water into the skillet.

Cover the skillet with a lid and let the mixture simmer on low heat until the carrots are cooked about 1/4. Now it’s time to add the peas, which will bring a note of freshness and a vibrant color to the dish. Season with salt and pepper to taste and don’t forget to add a bay leaf broken into small pieces to enhance the flavors.

Keep the lid on the skillet and let the sauce simmer until all the vegetables are completely cooked, and the sauce has reduced enough to achieve a perfect consistency. Once the pasta is cooked, drain it well, and when the sauce is ready, add it over the pasta. Mix well so that the vegetables and sauce are evenly distributed over the pasta.

Serve the dish warm, sprinkled with plenty of grated Parmesan or another preferred cheese that will melt and add a delicious creaminess. This dish is not only nutritious but also full of flavors that will delight your taste buds. Enjoy your meal!
