In a large bowl, combine the boiled noodles with cottage cheese or feta cheese, depending on your preferences. Add sugar, salt, grated lemon zest, and if desired, orange zest, which will add an extra flavor. Mix the ingredients well until you obtain a homogeneous composition. Next, add the raisins, which will provide a sweet note and a pleasant texture to the dish, and the egg yolks. Mix again, ensuring that all ingredients are well integrated.

This step is essential because the beaten egg whites will add extra fluffiness to the composition, making the noodles lighter. Once the egg whites are ready, carefully fold them into the noodle mixture using a spatula to avoid losing air from the egg whites. Mix with circular motions, from top to bottom, until everything is well homogenized.

Prepare a fireproof dish, greasing it with margarine or butter to prevent sticking. Carefully pour the noodle mixture into the dish, leveling the surface with a spatula. Preheat the oven to 180 degrees Celsius and place the dish in the oven. Bake for about 30-40 minutes or until the top is golden and browned. When ready, remove the dish from the oven and let the dessert cool slightly before slicing.

You can serve this delight warm or at room temperature, decorated with a little powdered sugar on top or alongside a fruit sauce, as preferred.
