Chicken Soup with Sour Cream
Ingredients: 1 kg chicken with bone, 3 l water, 300 g sour cream, 1 onion, 5 cloves of garlic, 2 carrots, a piece of celery, a piece of parsley root, 1 egg, magic borscht to taste, 1 tablespoon of flour, salt, a bunch of parsley.
To prepare a delicious meat soup with vegetables, start by preparing all the necessary ingredients. Chop the onion, parsnip, celery, and carrots into small cubes, making sure they are of uniform size to cook evenly. This step will not only enhance the appearance of the dish but also help release the flavors during cooking.
The chosen meat is placed in a large pot with approximately 3 liters of cold water. It is important for the water to be cold to allow the proteins in the meat to relax, which will lead to a clearer soup. Once the water starts boiling, let the meat boil for about 15 minutes, during which time foam will form on the surface. This must be removed with a skimmer to achieve a clear and appetizing soup. After you have cleaned the soup of foam, add the diced vegetables to the pot.
Let everything boil together until the meat is tender and the vegetables become slightly soft. While you wait, take a bowl and beat the egg well with a fork until it becomes homogeneous. Gradually add the sour cream, stirring continuously to avoid lumps. Subsequently, add the flour to this mixture, mixing well to obtain a fine paste. The crushed garlic will be added at the end to give it an intense and savory flavor.
When the vegetables and meat are cooked, take a ladle of the broth from the pot and gradually add it over the egg and sour cream mixture, stirring continuously to prevent the egg from coagulating. Once everything is well incorporated, carefully pour the mixture back into the pot with the soup. Now is the time to add the seasoning and salt, adjusting the spices to taste.
For an extra flavor boost, add the magic borscht dissolved separately in the hot broth. This will add a pleasant acidity and will perfectly complement the flavors. Let the soup simmer on low heat for another approximately 10 minutes to allow the flavors to meld. When the time is up, turn off the stove and let the soup rest for a bit. Finely chop the fresh parsley and add it at the end, after you have turned off the heat, to preserve its vibrant aroma.
Serve the soup hot, alongside a slice of fresh bread, to fully enjoy every bite. This recipe is not only comforting but also full of nutrients, perfect for any occasion!
