 Ingredients: -4- 5 heads of garlic, local -4 tablespoons clarified butter (ghee) -6 peeled tomatoes, diced -150 g sour cream -150-200 g cheese, diced -bran borscht or 1 teaspoon of “Magic Borscht with sour cream - Delikat” for souring, to taste -1/2 bunch of fresh parsley, finely chopped -1 l water -salt -pepper mix - black, white, green, red -thyme, oregano, basil, optional and to taste

To prepare a delicious and aromatic soup, start by boiling peeled garlic in a pot of lightly salted water, along with a tablespoon of clarified butter (ghee). Let it boil for about 20 minutes to allow the flavors to fully develop. While the garlic is boiling, prepare the tomatoes. Score them at one end in a cross shape and blanch them in hot water for 30 seconds. This method will make peeling them easier. Once done, transfer the tomatoes to a bowl of cold water and let them cool for a minute before peeling. Once peeled, chop them finely.

Add the chopped tomatoes to an oven-safe dish, such as a casserole or a clay pot. Here, combine them with three tablespoons of clarified butter (ghee) and place them in the preheated oven, set to moderate heat. Let them bake for 20-30 minutes, stirring occasionally to ensure even cooking. After the tomatoes start to caramelize and reveal their flavors, add the finely chopped parsley and the hot garlic broth from the pot. Return the dish to the oven and allow it to continue cooking for another 10-15 minutes.

Meanwhile, prepare the bran borscht, which should be warm and previously boiled. You can also use a teaspoon of the powder from "Magic Borscht with Cream" for a more intense flavor. Add the cheese cubes, mix diluted sour cream with a few ladles of hot soup, then season with salt, pepper, and other herbs of your choice, such as thyme, basil, or oregano, according to your preferences. Blend the mixture and leave it in the oven for a few more minutes so that the flavors meld together and the cheese melts slightly.

The soup is served hot, in pre-warmed bowls, sprinkled with finely chopped green parsley for an extra touch of freshness. This recipe delights not only with its intense taste but also with perfectly blended flavors, being just as good served cold, offering a savory alternative for warm days.
