Bean Soup with Green Salad

This bean soup recipe is truly special, not only for its ingredients but also for how each step contributes to creating a refined and comforting flavor. We begin the process by taking care of the beans. It is essential to soak them overnight to reduce cooking time and improve digestibility. After spending the night in cold water, we rinse the beans under a stream of cold water and put them to boil in a large pot with fresh water.
We add the usual vegetables that perfectly complement the flavors, such as carrots, onions, and celery. There is no need for smoked meat, as we want to keep a clean and fresh taste. We simmer everything over medium heat until the beans become tender, and the vegetables are cooked but still retain their texture. This generally takes between 45 minutes to an hour, depending on the type of beans used.
In the meantime, we prepare the roux that will add a layer of flavor to this soup. In a pan, we melt a small amount of oil and add a tablespoon of flour, stirring continuously to avoid lumps. The roux should turn beige without browning too much to avoid a bitter taste. Once it reaches the desired shade, we deglaze with the liquid in which the beans boiled, mixing well to achieve a smooth sauce. We let it simmer for about 15 minutes for the flavors to combine.
Once the beans are nearly done, we add the roux to the pot and stir gently. Now it’s time to chop the lettuce, fresh and crunchy, and add it to the soup. It’s important not to boil the lettuce but to let it soften in the heat of the soup, thus preserving all its nutrients and vibrant flavor.
When the soup is completely cooled, we add the finely chopped dill, which will bring an extra freshness and perfectly complement the taste of the beans. To give it a tangy note, we can add a tablespoon or two of vinegar, depending on individual preferences. This soup can be enjoyed both hot and cold, making it a versatile choice for any time of the day. It is a simple yet flavorful recipe that reminds us of the authentic tastes of childhood.
