Baked Potatoes for Lent
Ingredients: 400 grams of potatoes, 200 grams of breadcrumbs, 100 grams of sesame, spices (sweet paprika, hot paprika, salt, pepper), olive oil
We start our delicious recipe with a careful selection of potatoes. Choose medium-sized potatoes, ideal for boiling and then crisping in the oven. We peel the potatoes with a sharp knife, ensuring we remove any imperfect areas, then cut them into large pieces, about 4-5 centimeters. This size will allow for even cooking, keeping their inside soft and creamy. In a large pot, we bring water to a boil and add a generous tablespoon of salt, which will enhance the flavor of the potatoes.
Once the water starts to boil, we add the potato pieces and let them boil for about 10 minutes, until they become slightly soft but not fully cooked. This step is essential for achieving a perfect texture at the end. After boiling, we remove them with a spatula and let them cool on a plate, where we drizzle them with good quality olive oil. This will not only add a special flavor but also help with the even frying of the potatoes in the oven.
Now, let’s take care of the spice mix. In a bowl, we combine breadcrumbs, sweet or hot paprika, depending on preferences, and sesame seeds. The breadcrumbs will provide a crispy crust, while the paprika will add a touch of color and flavor, and the sesame will bring extra texture. We mix the ingredients well, ensuring that each ingredient is evenly distributed.
The next step is to roll each potato piece in the breadcrumb mixture, making sure they are completely covered. This step is crucial for achieving a delicious and crispy crust. After we finish rolling the potatoes, we prepare a baking tray lined with parchment paper. We place the potato pieces on the tray, making sure to leave a little space between them to allow air circulation and achieve that perfect crust.
Before placing the tray in the oven, we drizzle the potatoes again with a splash of olive oil, which will help caramelize the breadcrumbs. We preheat the oven to 200 degrees Celsius, and once it's ready, we place the tray inside and let the potatoes bake for about 30 minutes. During baking, it is recommended to turn them once or twice to ensure they brown evenly. In the end, you will get crispy, golden, and flavorful potatoes, perfect as a side dish or appetizer.
