Salty Crown
To prepare a delicious and flavorful cheese and salami pie recipe, we start by sifting the flour into a large bowl to ensure it is free of lumps and easy to work with. In another container, we will dissolve the yeast in warm milk, adding sugar to activate the yeast. The mixture will become frothy, indicating that the yeast is active and ready to be incorporated into the dough. Once the yeast is fully dissolved, we will add it to the sifted flour.
Next, we will add salt, beaten eggs, and soft butter to the mixture. I prefer to use a combination of butter and lard to achieve a richer and fluffier texture. We mix the ingredients with a spatula until everything is well incorporated, and then we will knead the dough with our hands. The goal is to obtain an elastic dough that does not stick to the sides of the bowl. Once we achieve the desired consistency, we cover the bowl with a clean towel and let the dough rise in a warm place for about an hour, or until it doubles in volume.
After the dough has risen, we will roll it out on a floured surface, obtaining a fairly thin sheet. Now comes the creative part: we will add cheese, which we can choose according to our preferences - cottage cheese, telemea, or any other preferred type. We also add slices of salami, which we can cut thinner or thicker, depending on our taste. If we have leftover meat or vegetables in the fridge, feel free to use them to create a customized pie.
After filling the sheet with the desired ingredients, we carefully roll the dough, making sure to tighten it well so that the filling does not leak out. Finally, we form a circle with the roll and seal it well to prevent it from opening during baking. Using a knife, we lightly score the surface of the roll, creating a pattern of our choice. We let the pie rise again, this time for an hour.
Before baking, we brush the pie with a mixture of egg yolk and a little milk to achieve a golden and shiny crust. We sprinkle sesame or poppy seeds on top, which will add a special flavor and a crunchy texture. Then, we bake it in the preheated oven at 180 degrees Celsius for 25-30 minutes, or until it becomes golden brown and appetizing.
This pie is perfect for serving at a party or a celebration, having a savory taste and an aroma that will delight everyone. It is undoubtedly a recipe I will happily repeat every time!
