To prepare a delicious soup with fluffy dumplings, we start by preparing the basic ingredients. We finely chop a medium onion, a carrot, and a parsley root, each bringing an important contribution of flavor and nutrients. These vegetables will be the base of our soup, providing a pleasant taste and a fine texture. After chopping them, we add them to a pot with cold water and bring them to a boil over medium heat, simultaneously adding two teaspoons of Delicat to enhance the flavors. It is important to let them boil until they become soft and aromatic.

In the meantime, we dedicate ourselves to preparing the dumplings. In a bowl, we crack two fresh eggs. It is essential that the eggs are of good quality, as they directly influence the final taste of the dumplings. We gradually add between 150 and 200 grams of semolina, depending on the size of the eggs. We incorporate a pinch of salt and half a teaspoon of baking soda. This baking soda will help achieve a fluffy texture, contributing to the aeration of the mixture. We mix the ingredients well and then let the mixture rest for five minutes. This step is crucial as it allows the semolina to absorb moisture and swell, resulting in a consistent paste, but not too soft.

After the vegetables have boiled and the flavors have melded, we return to the dumplings. Using a teaspoon, we take portions of the mixture and carefully add them to the soup, being careful not to overcrowd the pot. We cover the pot with a lid and let the dumplings simmer on low heat until they become fluffy and double in volume. You can check if they are ready by using a fork – if they rise easily to the touch, they are perfect.

When the dumplings are ready, we turn off the heat and sprinkle finely chopped fresh parsley on top, which will add a touch of freshness and color to the soup. We let the flavors infuse for a few minutes, then we can serve the soup hot, enjoying every spoonful. It is a simple yet extremely comforting recipe, perfect for cool days or when we need a touch of warmth. Enjoy your meal!
