- 2 beef bones with marrow
- 2 large carrots
- 1 large onion
- 1 celery root
- 1 tablespoon peppercorns
- 3 egg yolks
- 350 g sour cream (32%)
- 2 cloves of garlic (peeled)
- 3 tablespoons honey apple cider vinegar
- Chopped parsley leaves
- Chopped lovage leaves
- Salt, to taste
Preparing tripe soup is not just a simple recipe, but a culinary experience that brings the family together. Let’s get started!
1. Washing and preparing the ingredients:
The first step is to thoroughly wash the tripe and beef bones. This is essential to remove any impurities and achieve a clean taste. Use cold water and, if desired, you can add a bit of vinegar to assist in cleaning. Also, peel the carrots, onion, and celery. These vegetables will add sweetness and flavor to the soup.
2. Boiling the ingredients:
In a large 6-liter pressure pot, add the tripe and bones, along with the carrots, onion, and celery. Fill with water and add the peppercorns and a little salt. Cover the pot and bring to a boil. Let it boil for about 2 hours. This step is crucial; slow cooking will help develop the flavors and make the tripe tender.
3. Preparing the tripe:
Once boiled, remove the tripe from the pot and let it cool slightly. Cut the tripe into thin strips, about 1 cm wide, for perfect integration into the soup. The boiled carrots and celery can be mashed with a fork to add texture.
4. Combining the ingredients:
In another pot, strain the broth obtained from boiling. Add the strips of tripe and the mashed vegetables. Put it back on the heat and, depending on how tender the tripe is, let it boil for a few minutes. If the tripe is not tender enough, let it simmer for a few more minutes.
5. Preparing the yolk mixture:
In a bowl, whisk the egg yolks with the crushed garlic and a little salt until you obtain a creamy paste, similar to mayonnaise. Add the parsley and lovage leaves, sour cream, and vinegar. Mix well and, to thin the mixture, add 1-2 ladles of broth. This step will help prevent the sour cream from curdling.
6. Finishing the soup:
After you have obtained the yolk mixture, pour it into the pot with the soup, stirring constantly. Put the lid on and let it reach boiling point again. Then, turn off the heat and let the soup rest for a few minutes.
7. Serving:
Tripe soup is served hot, with slices of hot pepper, which adds a touch of spiciness. You can garnish the plates with additional parsley or lovage leaves for a fresh and appealing appearance.
Useful tips:
- Make sure the tripe is well cleaned. You can ask the butcher to prepare it for you.
- If you want a more sour soup, feel free to add more vinegar, according to your preferences.
- The soup can be frozen, but I recommend adding the sour cream and yolks just when reheating it.
Nutritional benefits:
Tripe soup is rich in protein, due to the beef and eggs, and contains essential vitamins from the vegetables. Beef tripe is also a good source of collagen, beneficial for skin and joint health.
Frequently asked questions:
1. Can I use pork tripe instead of beef tripe?
Yes, but the taste will be different. Pork tripe has a fattier texture and a more intense flavor.
2. Is tripe soup suitable for children?
Tripe soup can be consumed by children, but make sure it is not too spicy. You can adjust the spices to their taste.
3. What other dishes can tripe soup be paired with?
It pairs wonderfully with fresh bread or polenta. A summer salad would perfectly complete the meal.
Tripe soup is more than just a simple dish; it is a recipe full of tradition that brings people together. So, the next time you want to prepare a special lunch for your loved ones, don’t hesitate to choose this delicious recipe. Enjoy!
