To prepare a delicious dish, the beginning is essential. The first step in this recipe is to peel the potatoes. Choose medium-sized potatoes that are firm and free of blemishes. After peeling them, grate them using a small grater to achieve a fine texture that will help create a delicious filling.
In a large bowl, add the grated potatoes and incorporate the sour cream, eggs, and your favorite spices. You can add salt, pepper, as well as dried dill or paprika, depending on your taste. Mix all the ingredients well, then gradually add the flour to obtain a homogeneous and slightly dense dough. This mixture will form the base of the filling for the pancakes.
In a separate pan, heat a little oil and add the finely chopped onion. Sauté the onion over medium heat until it becomes translucent and slightly golden. Then, add the diced bell pepper and continue cooking for a few minutes, splashing with a little water to prevent burning. This is when the chicken breast, cut into small pieces, will make its entrance. Add it to the pan and season with salt and pepper, stirring to share the flavors with the onion and bell pepper.
Let the mixture simmer covered for about 15-20 minutes, or until the chicken breast is well cooked and juicy. Once ready, remove the pan from the heat and let the filling cool slightly.
In the meantime, you can prepare the pancakes. Heat a non-stick skillet and pour a ladle of the pancake mixture. Cook them one at a time, making sure they are thin and golden on both sides. From this recipe, you should get about 6 pancakes, enough to fill generously.
Once the pancakes are ready, take each pancake and add a portion of the chicken and vegetable filling, then carefully wrap them. Make sure the filling is evenly distributed, but not too much to avoid breaking the pancakes.
Serve the pancakes hot, perhaps with a spoonful of sour cream on top or alongside a fresh salad. This is a comforting dish, full of flavors, perfect for a family dinner or to impress guests. Enjoy every bite!
