To prepare this delicious cake, it is essential to organize ourselves in advance. It is recommended to bring all the ingredients and trays into the kitchen the night before, so that we have everything at hand. We start by crumbling the fresh yeast, which will be the base of the fermentation. Then, we mix the yeast with half of the warm milk, adding just enough flour to obtain a soft dough, similar to a paste. It is ideal to use about 3 heaping tablespoons of flour to achieve the desired consistency. After obtaining the dough, we sprinkle it with a little flour, cover it with a clean towel, and let it rise in a warm place. During this time, the dough will grow, and small cracks will appear on the surface, indicating that fermentation has taken place.
Once the dough has risen, we move on to the next step. In a large bowl, we mix the dough with the remaining sifted flour, one egg, salt, 60 g of granulated sugar, the rest of the milk, and 100 g of melted and warm butter. We knead the dough well until it becomes elastic and pulls away from the bowl and our hands. It may be necessary to add a little extra flour to achieve the correct consistency. Once the dough is ready, we cover it again with a towel and let it rise for 20-30 minutes, or until it doubles in volume.
In the meantime, we take care of the raisins. They need to be washed and cleaned of stems, then placed in a bowl with rum to flavor. Separately, we mix the cinnamon with 120 g of sugar, creating a fragrant mixture. We prepare the baking tray, whether we choose a cake pan with removable sides or a rectangular one. We grease it with butter only on the bottom, or line it with baking paper, ensuring it is ready to receive the dough.
Once the dough has risen, we roll it out on a floured work surface, forming a sheet about 3 mm thick. We spread this sheet with 100 g of melted butter, sprinkle the sugar and cinnamon mixture, add the drained raisins and ground almonds or walnuts, then drizzle with the remaining melted butter (50 g). We tightly roll the dough and cut it into thick pieces of 4-5 cm. We place these pieces upright in the prepared tray, making sure to place them fairly close to each other.
We let the cake rise in the tray for another 30 minutes, then place it in the preheated oven at moderate heat. As the cake bakes, we will take care to drizzle it 2-3 times with a mixture of hot milk, butter, and vanilla powdered sugar, to give it a moist and flavorful texture. We bake the cake until it becomes nicely browned. Finally, we dust it with powdered sugar, giving it an inviting appearance and a sweet taste. This cake will surely be a delight, perfect for any occasion.
