After greasing the dish, sprinkle half of the breadcrumbs on the bottom to create a crispy and delicious base that will absorb the juices of the apples.
Peel the apples and remove the cores, then slice them thinly or chop them into small cubes. Alternatively, you can choose to grate them on a large grater for a finer texture. Arrange the apples in an even layer in the prepared dish, taking care not to overlap them too much. Evenly sprinkle cinnamon over the apples, giving them a warm and comforting aroma, then add the remaining breadcrumbs, which will contribute to a crispy crust.
In a separate bowl, mix the eggs with the sugar using an electric mixer until you obtain a fluffy cream that will triple in volume. Ensure that the sugar is completely dissolved in the eggs. Sifting the flour twice is essential to avoid lumps and achieve a fine texture. Add the sifted flour along with the baking powder to the egg mixture, folding everything together gently with a spatula in an upward motion.
Carefully pour the obtained batter over the layer of apples, ensuring that you distribute it as evenly as possible. Even if the apples are not completely covered, don’t worry; the batter will rise nicely during baking and will cover the fruit. Place the tray in the preheated oven and let the cake bake for about 20-30 minutes at 180 degrees. Check if it is done by doing the toothpick test: insert a toothpick in the center, and if it comes out clean, the cake is baked. Finally, remove the tray from the oven and let the cake cool on a rack.
