When we think of Tiramisu, most of us imagine a classic Italian dessert, with layers of coffee, cocoa, and mascarpone. However, our version today, Orange Tiramisu, brings a fresh, citrusy, and vibrant twist to this iconic dessert. A recipe that blends tradition with innovation, perfect for impressing friends at a special dinner or brightening up an ordinary day.

A brief history

Tiramisu originated in the 17th century in the city of Siena, where it is said to have been created during the visit of Grand Duke Cosimo de' Medici III. This delicacy, initially named "Duke's Soup," was cherished not only for its divine taste but also for its supposed aphrodisiac properties. Over time, the name was changed to Tiramisu, which translates to "pick me up," a reference to the energizing effect it has. Over the years, countless variations of this recipe have emerged, and I am excited to present to you a Portuguese version, with cream and an orange flavor that will delight your senses.

Ingredients

- 2 dl espresso coffee (approximately 200 ml)
- 50 ml brandy
- 2 tablespoons sugar
- 500 g Creme Pasteleiro (vanilla cream)
- 1 large orange (juice)
- 150 g mascarpone or cream cheese
- 1 package of ladyfingers (approximately 200 g)
- Cocoa (for decoration)
- Fresh fruit (optional, for serving)

Preparation

1. Preparing the vanilla cream (Creme Pasteleiro)
This is the delicious base of our dessert, with a velvety texture and rich taste. Start by heating 300 ml of milk in a saucepan, being careful not to let it boil too hard. In a separate bowl, combine 60 g of sugar, 45 g of flour, 1 whole egg, 3 egg yolks, a pinch of salt, and another pinch of vanilla powder. Whisk all the ingredients together well.

When the milk is hot, gradually pour it over the egg mixture, stirring continuously to prevent the eggs from curdling. Place the mixture back on low heat and stir constantly until it thickens. Once the cream reaches the desired consistency, allow it to cool.

2. Preparing the coffee
In a bowl, prepare the espresso coffee and let it cool slightly. Add the brandy and the two tablespoons of sugar, stirring well to dissolve the sugar. This combination will give the ladyfingers an intense and aromatic flavor.

3. Creating the orange mixture
After the vanilla cream has cooled, add the juice from the orange and the mascarpone (or cream cheese) to it. Gently mix with a spatula until well combined. This step is essential to achieve a creamy texture and balanced flavor.

4. Assembling the tiramisu
Take a package of ladyfingers and dip each one in the coffee mixture, being careful not to leave them too long to avoid excessive sogginess. Start assembling the dessert in cups or a serving dish. Add a layer of cream, followed by a layer of soaked ladyfingers, continuing to alternate layers until you reach the top of the container. Ensure that the last layer is cream.

5. Refrigerating
Once you have finished assembling the dessert, cover it with plastic wrap and refrigerate for at least 4 hours, preferably overnight. This resting time allows the flavors to develop and the dessert to set.

6. Serving
Before serving, sprinkle cocoa over each portion and add some fresh fruit for a pop of color and freshness. I recommend strawberries or raspberries, which pair perfectly with the flavors of our dessert.

Useful tips

- Substitutions: If you don’t have brandy, you can use rum or another preferred liqueur. If you prefer a non-alcoholic version, you can use vanilla extract instead of brandy.
- Texture: Make sure the vanilla cream is not too hot when adding the mascarpone to avoid melting it.
- Variations: You can experiment by adding grated orange zest to the vanilla cream to enhance the citrus flavor.

Nutritional benefits

Orange Tiramisu is a delicacy that, although it is a dessert, contains beneficial ingredients such as eggs (a good source of protein) and oranges (rich in vitamin C). However, moderation is recommended due to its sugar and calorie content.

Frequently asked questions

- Can I use another type of cheese instead of mascarpone?
Yes, you can use cream cheese, but the taste will be slightly different. Mascarpone provides a creamier texture.

- Is this dessert suitable for vegans?
For a vegan version, you can use a plant-based cream and egg-free ladyfingers.

- How long does it keep in the refrigerator?
Orange Tiramisu can be kept in the refrigerator for 2-3 days, but it is best consumed on the first day.

Conclusion

Orange Tiramisu is a dessert that combines tradition with a touch of innovation, bringing new life to a classic recipe. With each bite, you will feel how the flavors intertwine, offering you a memorable culinary experience. I encourage you to try this simple recipe and enjoy every step of the preparation. Enjoy your meal!
