Borscht (Beetroot Soup)

 Ingredients: 2 smaller pieces of beetroot, 4-5 larger potatoes, 2-3 carrots, parsley root + leaves, 1 larger onion, green or raw beans, a quarter of finely chopped cabbage, lemon juice (or cabbage juice), sour cream to taste.

Beet soup is a tasty and healthy dish, ideal for providing the body with a dose of essential nutrients and helping it detoxify. We start by washing the beetroot well, removing any impurities from its surface. Then, we put it to boil in water, ensuring it is completely covered. Meanwhile, we take care of the other ingredients. We focus on potatoes, cabbage, onion, carrots, beans, and parsley, which we add to a large pot of water. These vegetables not only add a special flavor to the soup but also contain dietary fiber, vitamins, and minerals essential for a healthy diet.

After about 15-20 minutes, when the vegetables are cooked and slightly tender, we remove the beetroot from the heat and cool it under cold running water. This step is important as it helps us peel the beetroot more easily. Once peeled, we grate it, obtaining a fine texture that will enrich the soup.

We add the grated beetroot to the vegetable soup, mixing well to combine the flavors. We continue to boil the soup for a few more minutes, allowing the ingredients to release their taste and blend harmoniously. Then, it’s time to add the sauerkraut, which will give the soup a tangy flavor and aid digestion. Additionally, we add a little juice from the water in which the beetroot was boiled, which will enhance the color and flavor of the soup.

For an extra touch of freshness and flavor, we finely chop the parsley leaves and integrate them into the soup. They not only provide a pleasant appearance but also add a boost of vitamins. When serving, we can add sour cream to the bowl for a creamy taste; however, if we are observing a fast, we can skip this ingredient without affecting the essence of the soup. This beet soup is not only delicious but also very nutritious. It is excellent for detoxifying the body and for colon health, making it an ideal choice in the cold season or whenever we feel the need for a comforting dish.
