Turkish Spirals
To prepare these delicious cheese-filled spirals, start by rubbing the yeast with sugar in a small bowl. This process will help activate the yeast, making it liquefied. Once you have a homogeneous paste, add the buttermilk, sparkling water, oil, and egg white. Use a fork to mix the ingredients well, so that you obtain a uniform and smooth composition.
In a larger bowl, sift the flour together with the salt. Gradually pour the liquid mixture over the flour, first mixing with a wooden spoon. Then, switch to kneading by hand until you obtain a smooth and non-sticky dough. If the dough seems too hard, add 1-2 tablespoons of sparkling water. If, on the contrary, it is too soft, add 1-2 tablespoons of flour.
After you have obtained the desired dough, divide it into 12 equal pieces. Grease each piece with a little oil and place them on a large plate. Cover them with plastic wrap and let them rest for 15 minutes at room temperature.
After this time, take each piece of dough and roll it out with a rolling pin on an oiled work surface, forming round sheets about 1 mm thick. Place the obtained discs on another plate, overlapping them and greasing each with 1-2 tablespoons of oil to prevent sticking. Cover them again with plastic wrap and let them rest for another 15 minutes.
After the 15 minutes have passed, flip the plate with the discs onto the oiled work surface. Thus, you will have the disc that was rolled out first on top. Take one disc and, using the rolling pin, roll it into a very thin, almost transparent sheet. Drizzle the dough with a tablespoon of oil, then sprinkle cheese in the middle of the sheet. Roll the dough into a log shape, then twist it into a spiral (like a snail) and tuck the free end under the formed pie.
Place the spirals in a baking tray lined with parchment paper and brush them with a beaten egg yolk mixed with yogurt, to achieve a golden and appetizing crust. If desired, sprinkle seeds on top for added texture and flavor.
Preheat the oven to 190 degrees Celsius and bake the spirals for about 20-25 minutes or until they become nicely browned. Once baked, immediately remove them from the tray and place them on absorbent paper to remove excess oil. Let them sit for a few minutes, then transfer them to a rack to cool.
These spirals can be served both warm and cold, being perfect for any occasion or simply as a delicious snack. Enjoy them alongside a cup of yogurt or a fresh salad!
