Orange Rolls

 Ingredients: 3 eggs, 1/2 cup butter (110 grams), 3/4 cup milk (200 ml), 1/2 cup sugar (100 grams), 3/4 teaspoon salt, 4 and 1/2 - 5 cups flour (650 grams + a little more if needed... 1 cup is approximately 140-145 grams when it comes to flour), 2 teaspoons dry yeast, 1/4 cup water (60 ml), 2 muffin trays, butter for greasing the trays. For the filling: 1/2 cup butter (110 grams), 1 cup sugar (200 grams), juice from half an orange, grated zest from one orange.

Mix the eggs in a deep bowl, the same one in which we will prepare the dough. Add sugar and salt, gently mixing with a whisk or spatula, then set the mixture aside for a few moments. In another bowl, melt the butter over low heat, being careful not to let it burn. Once the butter is completely melted, pour the milk over it, stirring continuously to avoid lumps. It is important to remove the pot from the heat before the mixture gets too hot, as high temperature could destroy the yeast, which we do not want.

With the mixer running, add the butter and milk mixture to the beaten eggs, homogenizing everything. Then, add the yeast that has been soaked in warm water, ensuring that everything mixes well. Start incorporating the flour, adding 150 grams at a time. It is essential to mix well after each addition to achieve a uniform texture. After adding the fourth portion of flour, set the rest aside and continue mixing with the mixer fitted with hooks for about 5 minutes. The dough should be very sticky, and after the 5 minutes of kneading, we need to look at it closely. If the dough does not pull away from the sides of the bowl, cautiously add about 75 grams of flour and mix again.

It is crucial that the dough remains sticky but pulls slightly away from the walls. When you press your finger into the dough, it should stick well to your fingers. It is important not to exceed 650 grams of flour or, in the worst case, to add another 75-100 grams, depending on the type of flour used. Choosing a high-quality flour is essential for fluffy and flavorful rolls.

After the dough has been kneaded properly, use a spatula to gather the dough from the sides of the bowl and form a ball. Cover the bowl with plastic wrap and place it in the refrigerator to rest until the next day. An hour before we start forming the rolls, take the dough out of the refrigerator. At this stage, we will notice that the dough has risen considerably, even if it has not doubled in volume.

For the filling, grate the zest of an orange and squeeze the juice from half of it. Melt the butter, and place the sugar in a smaller bowl. Over the sugar, add the zest and orange juice, then the melted butter. Mix the composition well, ensuring that all ingredients are homogeneous.

On a white cloth, sprinkle flour and place the dough on top. Roll the dough into a rectangle about 1 cm thick, being careful to sprinkle a little flour on the dough to prevent it from sticking to the rolling pin. If the cloth is small, we can divide the dough in two. Spread the dough with the orange and butter filling, leaving 1 cm of the edges unspread. Roll the dough tightly and cut it into slices the thickness of a finger, ensuring that from this amount we get 24 slices.

Place each slice cut side up in the molds in the baking tray, which has been previously greased with butter. Cover the tray with plastic wrap greased with a little oil to prevent sticking. Let the trays rise in a warm place, and once the dough has doubled in volume, place them in the preheated oven at 190 degrees Celsius (375F) for 12-15 minutes, or until they are nicely browned.

We observe how the orange juice drains through the dough, leaving a sticky and sweet syrup, slightly caramelized, which will give a special taste to the rolls. It is recommended to place the muffin tray on another tray to avoid any spills that could dirty the oven. Once baked, immediately remove the rolls from the tray. These delicious rolls can be enjoyed with butter or alongside various dishes, bringing a touch of joy and flavor to your table.
