American Pancakes with Chocolate or Blueberries

 Ingredients: 220 grams of flour, 2 teaspoons of baking powder, 1 teaspoon of baking soda, 1/2 teaspoon of salt, 3 tablespoons of sugar, 2 eggs, egg whites beaten to stiff peaks and then folded in the yolks, 700 ml of buttermilk, today I used kefir, I didn't have buttermilk (+/- to be like thick cream), 60 ml of melted butter, plus for the pan, 1 teaspoon of liquid vanilla. For the filling: chocolate blueberries.

To prepare these delicious pancakes, first, you need to gather all the necessary ingredients so that you have everything at hand. Start by taking a large bowl and adding all the dry ingredients: flour, baking powder, baking soda, salt, and sugar. These will form the base of your mixture, and it is essential to mix them well so that there are no lumps.

In another bowl, beat the eggs until frothy, adding the buttermilk, melted butter, and vanilla extract. This mixture will add moisture and flavor to your pancakes, so make sure everything is well incorporated. Then, carefully combine the two mixtures, the dry and the liquid. It is very important not to overmix, as the pancakes will be fluffier if the batter remains with small lumps.

Once you have a smooth batter, it’s time to prepare the pan. Heat a little butter in a non-stick skillet over medium heat. When the butter has melted and starts to sizzle lightly, use a small ladle to pour the batter into the pan, about 60 ml for each pancake. You should be able to fit about 4-5 pancakes, but don’t forget to leave enough space between them to spread.

After a minute, when the pancakes start to brown, you can sprinkle chocolate, fruits, or anything else you desire on top. When the edges of the pancakes become slightly golden and bubbles form on the surface, flip them with a spatula and let them brown on the other side as well. When they are ready, remove them from the pan and serve them warm.

For an extra touch of flavor, you can add a teaspoon of whipped cream on top and a few drops of honey, or, if you prefer, a maple syrup that will combine perfectly with the flavor of the pancakes. If you choose to use bananas in the batter, don’t forget to add a little lemon juice when flipping them to balance their sweetness. These pancakes are perfect for a special breakfast or a sweet snack, and they are truly delicious. Enjoy!
