The phyllo pastry sheets are taken out on the work table and covered with a damp cloth to prevent them from drying out. This step is essential because phyllo sheets are very thin and can dry out quickly, becoming brittle and difficult to handle. A 23/33 cm baking tray is greased with melted butter, ensuring that every corner is covered to avoid the pie sticking. At this point, we prepare a delicious base: 5 sheets of phyllo are taken, which are brushed with melted butter between them, creating a rich and savory texture.

Separately, in a large bowl, all the filling ingredients are mixed well. These include fresh eggs, creamy ricotta, fine mascarpone, salty feta, milk, and mineral water. Each ingredient contributes to creating a rich and flavorful filling, and the added salt will enhance the delicious taste of the dish. After homogenization, 5 sheets of phyllo are set aside, and the remaining 10 sheets are taken one by one, dipped in the liquid mixture, and lightly crumpled. This technique will help absorb the filling, creating a delightful layered effect.

The crumpled sheets are placed in the tray, side by side, forming an even layer. After finishing the 10 sheets, the reserved 5 sheets are taken and placed on top of the liquid mixture, brushed with melted butter between them. This step ensures a golden and crispy crust at the end. Finally, it can be brushed on top with butter or sunflower or corn oil, to add an extra note of flavor and achieve an appetizing color.

The tray is placed in the preheated oven at 375°F (190°C) and left for 30 minutes. It is important to carefully monitor the baking time to ensure that the pie becomes golden and crispy on the outside. After being taken out of the oven, it is left to cool for 5 minutes. This will allow the filling to stabilize, making it easier to cut. It is cut into larger squares and served warm, offering a unique culinary experience. Enjoy your meal!
