This trick allows moisture to escape, thus preventing the formation of a too-thick crust on the surface of the meringue. The baking time is approximately 70 minutes, but it will also depend on your oven's specifics.
Once the baking time has expired, it is recommended to let the meringue cool in the oven with the door ajar. This step helps prevent the meringue from cracking, giving it a perfect, fluffy texture with a slightly crispy exterior.
