The combination of fragrant rice, sweet pineapple, and fresh ingredients makes this dish a true delight. Whether you serve it as an appetizer or as a main course, this fried rice will surely impress!
Ingredients:
- 300 g rice (preferably jasmine or basmati)
- 130-150 g fresh pineapple flesh (from a large pineapple)
- 2-3 tablespoons sunflower or sesame oil
- 2 eggs
- 100 g frozen (or fresh) peas
- 1 small carrot, diced
- 3-4 green onions, finely chopped
- 3-4 cloves of garlic, minced
- 2-3 tablespoons soy sauce
- 1 teaspoon fish sauce (optional, for an umami boost)
- Salt and pepper to taste
- Fresh coriander leaves for garnish
Instructions:
1. Preparing the rice: If you don’t have pre-cooked rice, start by washing the rice under cold running water until the water runs clear. Cook it according to the package instructions, but make sure to do it a few hours before frying the rice, as cold rice fries better.
2. Preparing the pineapple: Cut the pineapple in half lengthwise, carefully scoop out the flesh with a spoon, leaving the skin intact for a nice presentation. Measure out 130-150 g of the pineapple flesh and dice it. Save the rest for other recipes, such as an energizing smoothie or an exotic salad.
3. Heating the oil: In a wok or large skillet, heat the oil over medium heat. Sesame oil adds a rich flavor, but sunflower oil is an excellent choice for a more neutral taste.
4. Cooking the ingredients: Add the minced garlic and green onions to the hot oil and sauté for one minute. Add the carrot and peas, cooking for 2-3 minutes until they become slightly crisp.
5. Adding the eggs: Make a well in the center of the wok, pour in the beaten eggs, and quickly stir them with a spatula. When the eggs are almost cooked, mix them with the other ingredients.
6. Combining the ingredients: Add the cooked rice, diced pineapple, and soy sauce. Mix everything well, ensuring the rice is evenly coated with the soy sauce. Cook for a few minutes, stirring constantly, until everything is heated through.
7. Finishing the dish: Taste and add salt, pepper, or fish sauce to your liking. The fried rice with pineapple is ready!
Serving suggestion: Serve the fried rice in the pineapple halves for a spectacular effect. You can garnish with fresh coriander leaves and a few lime slices for an extra touch of freshness.
Variations: You can experiment with various proteins by adding cooked chicken, shrimp, or tofu for a vegetarian version. Also, replacing the pineapple with mango or grated mango can provide a new tropical twist.
These tips and details will help you achieve perfectly fried rice, full of flavors and colors, ideal for any meal! Enjoy every bite of this quick and delicious dish, packed with flavor!
