Preparation steps

1. Preparing the cake base
We start by preparing a fluffy and delicious cake base. Preheat the oven to 180°C and prepare a rectangular baking pan lined with parchment paper. In a large bowl, beat the egg whites with a pinch of salt until foamy. Gradually add the sugar and continue mixing until you achieve a glossy foam that holds on the whisk. This is the essence of a successful cake base!
Add the egg yolks, one at a time, gently mixing after each addition. It’s important to keep the air in the mixture to achieve a light texture. In another bowl, mix the flour with the cocoa and baking powder. Incorporate this mixture into the egg mixture, stirring carefully to avoid losing air.

2. Finalizing the mixture
Finally, add the oil and vanilla extract, mixing gently. Pour the mixture into the prepared pan and level the surface with a spatula. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cake base cool completely in the pan.

3. Preparing the cream
To achieve a smooth and delicious cream, bring the milk to a boil with the sugar. In a small bowl, mix the flour with a little cold milk to avoid lumps. When the milk starts to boil, add the flour mixture and stir constantly until the cream thickens. Once the cream reaches the desired consistency, add the butter and mix until completely melted. Finally, turn off the heat and add the lemon juice and coconut. This addition will provide a fresh taste and a pleasant texture!

4. Assembling the cake
After the cake base has cooled, take a plate and cut out Mickey's head, being careful to keep enough scraps for the ears. Use a larger glass to cut out the ears. Place the cake base on a tray and add a generous layer of cream, smoothing the surface well. Melt the chocolate in a double boiler or microwave and use it to decorate the cake, adding adorable details.

5. Serving
Once the cake is assembled, let it sit in the fridge for an hour to firm up the cream. It’s perfect for serving at parties or special occasions. You can accompany it with a glass of milk or fresh lemonade for a delicious contrast.

Practical tips
- Make sure all ingredients are at room temperature before starting preparation to achieve a uniform mixture.
- If you want to turn this cake into a more sophisticated dessert, you can add a layer of fruit jam between the base and cream.
- For a gluten-free version, try using almond flour or a gluten-free flour blend.

Nutritional information
Per serving, the Mickey cake contains approximately 280 calories, being a less healthy choice due to the sugar and butter, but definitely a treat worth enjoying occasionally. The coconut adds fiber and healthy fats, while the lemon provides a boost of vitamin C.

Frequently asked questions

Remember, cooking is an art, and every recipe tells a story. So enjoy the process, experiment with the ingredients, and most importantly, savor every bite of this wonderful Mickey cake! Of course, don’t forget to share the result with your loved ones!

We beat the egg whites with a pinch of salt until frothy, add the sugar, and mix until it becomes a glossy foam. We add the yolks one by one and gently mix after each. We add the essence, mix the flour with cocoa and baking powder, and gently incorporate it into the mixture. Finally, we add the oil. We pour the mixture into a baking tray lined with parchment paper and place it in the preheated oven until it passes the toothpick test. We let it cool. CREAM: We bring the milk to a boil with the sugar. Separately, we mix the flour with a bit of milk and add it to the boiling milk. We stir continuously until it thickens. We add the margarine, and when it melts, we turn off the heat and add the lemon juice and coconut. When the cake is cool, we take a plate and cut off the top (be careful to leave some for the ears) and use a larger glass to cut out the ears. We place it on a tray and add the cream. We melt the chocolate and decorate it. I didn't have time to take a picture of the section and was embarrassed to do so in front of the guests. I spread a layer of cream that I used for the cake over the one I made so that the face would be recognizable.
