This delicious poppy seed cake recipe is perfect for any occasion, whether it's an anniversary, a party, or simply a day when you want to enjoy something sweet. We start with an essential step: preparing the ingredients. You will need 4 egg yolks, 150 g of sugar, 100 g of ground poppy seeds, 100 g of melted margarine, 200 g of flour, 250 ml of milk, 1 vanilla essence, 1 teaspoon of baking soda, and 1-2 tablespoons of vinegar.

The first step is to mix the egg yolks well with the sugar until the mixture becomes a fluffy cream of an intense yellow. This process will bring air into the mixture, which will help achieve a fluffy cake. Then add the ground poppy seeds and melted margarine, mixing well to incorporate all the ingredients. It is important that the margarine is warm but not hot, so as not to 'cook' the egg yolks.

Next, it's time to integrate the dry ingredients. Add the flour, milk, vanilla essence, and baking soda activated with a little vinegar. The latter will help activate the baking soda, creating air bubbles that will make the cake fluffier. Mix everything until the ingredients combine, but be careful not to overmix, as this could make the cake denser.

Separately, beat the egg whites until stiff peaks form, using an electric mixer or a whisk. It is important that the egg whites are beaten very well, so that they form firm peaks. Once you have achieved this consistency, gradually add them to the poppy seed mixture, folding gently with a spatula or spoon in an up-and-down motion. This will ensure that the air in the egg whites remains in the mixture, giving the cake a light texture.

Line a baking tray with parchment paper, measuring approximately 25 cm x 30 cm. Pour the mixture into the tray, leveling the surface well with a spatula. Preheat the oven to 180 degrees Celsius and place the tray in the oven, allowing the cake to bake for about 40 minutes. It is important to do the toothpick test: insert a toothpick into the center of the cake, and if it comes out clean, the cake is ready.

Once cooled, you can dust powdered sugar on top or add a chocolate glaze for extra flavor. This poppy seed cake not only looks good but also has an irresistible taste, perfect to be enjoyed alongside a cup of tea or coffee. Enjoy your meal!
