To prepare this delicious cherry pudding cream recipe, we start by preparing the pudding base. In a bowl, we mix 50 g of starch with 30 g of pudding powder, ensuring there are no lumps. We dissolve this mixture in 3 tablespoons of cold milk, stirring well until we obtain a smooth paste. This will help prevent clumping when we add the mixture to the warm milk.

Meanwhile, in a saucepan, we heat 500 ml of milk together with 100 g of sugar, stirring constantly to ensure the sugar dissolves completely. When the milk begins to boil, we add the starch and pudding mixture, stirring quickly with a spatula or whisk to avoid lumps. After a few minutes, when the mixture thickens, we remove the saucepan from the heat and let it cool.

Once the cream has completely cooled, it’s time to add some flavor. In another bowl, we whip 250 ml of cream until it becomes firm, then we carefully fold it into the cooled pudding cream with a spatula. Meanwhile, we prepare 200 g of cream cheese, which we mix with the freshly squeezed juice of one orange. We add this mixture to the pudding cream and gently combine everything to avoid losing air from the whipped cream. Finally, we fold in the cherries, which we have pitted and halved, to add a tart note and a contrast of textures.

For the glaze, we use 4 bars of dark chocolate, which we melt in the microwave for about 3 minutes, stirring occasionally to prevent burning. Once melted, we gradually add 100 ml of milk and 2 tablespoons of Alexandrion brandy, stirring vigorously to achieve a smooth and shiny glaze. The consistency of the glaze should be fluid but not too runny, so that it can cover the cream without excessive dripping.

We assemble the dessert: on a plate or platter, we place a layer of cream, then carefully pour the chocolate glaze on top. We decorate with a few whole cherries on top and, if desired, with chocolate flakes or chopped nuts. We let the dessert chill in the refrigerator for a few hours for the glaze to set and the flavors to combine perfectly. This recipe offers a perfect balance between sweetness and acidity, and the combination of cheese, cream, and cherries will sweeten any moment of the day.

Cream: 1 packet of chocolate flavored pudding powder, 1 tablespoon of starch, 300 ml of milk, 80 g of sugar, 200 ml of liquid cream, 200 g of cottage cheese, 600 g of cherries (I used frozen cherries which I let thaw at room temperature and then drained well).
