Potato tortilla is a traditional Spanish dish that brings together simplicity with exquisite taste. This recipe is based on a few essential ingredients, but the preparation process is what transforms the potatoes and onions into this delicious dish, perfect for any occasion.

Start by peeling the potatoes and onions. Make sure to wash them well to remove any impurities. Cut the potatoes into evenly sized cubes so they cook evenly, and the onion should be finely chopped to incorporate well into the tortilla. In a deep frying pan, add enough oil to cover the potatoes. When the oil starts to sizzle, carefully add the potatoes and onions. It is essential that they boil more than fry; this way, the potatoes will become soft and flavorful, giving the tortilla a fine texture.

Avoid stirring the mixture too often; infrequent stirring allows the potatoes to cook evenly, but if you prefer a tortilla with a less uniform texture, you can stir more frequently to crush the potatoes a little. When the potatoes are ready, remove them to a strainer to drain excess oil. Now is the perfect time to deal with the eggs. Beat the eggs in a bowl, adding a little salt to enhance their flavor.

After you are done with the eggs, combine the potatoes with them, gently mixing to avoid crushing the mixture too much. In another frying pan, add a little oil (you can also use the leftover oil from the potatoes) and place it on the heat. Once the oil is well heated, pour the egg and potato mixture into the pan, making sure it is evenly distributed. Let the tortilla fry for a few moments until the bottom becomes golden and crispy.

To flip the tortilla, use a platter or a large plate; place it over the pan and carefully turn the tortilla over. Continue to cook the other side for a few minutes until it becomes equally golden. Once the tortilla is ready, remove it to a plate lined with paper towels to absorb excess oil.
