The recipe for Christmas caramel sticks is a perfect choice to add a touch of magic to the holiday table. These treats are not only flavorful and delicious but also very attractive, bringing a splash of color and festive charm.

To prepare the dough, it is essential to have a food processor, and I chose to use the mixer with dough hooks, a tool I had never used before. It was an inspired choice, as the dough turned out perfect! We start by cutting the soft butter into cubes and placing it in a large bowl. We mix the butter until it becomes fluffy and airy, a process that will add a pleasant texture to our sticks. Once the butter is ready, we gradually add the powdered sugar, being careful to start at a low speed to avoid spilling the sugar. Once the sugar is well incorporated, we can increase the mixer speed to achieve a smooth and creamy composition.

After obtaining a fine texture, we add the egg yolks, vanilla essence, and almond essence. These flavors combine harmoniously and bring a festive note to the dough. Finally, we incorporate the sifted flour, gently mixing to obtain a dough that is not too hard but cohesive enough to be shaped.

We divide the dough into two equal parts, and for one of them, we add red food coloring. We use the mixer to thoroughly mix the coloring to avoid staining our hands. If we use liquid coloring, we may need to add a little more flour to achieve the desired consistency. Once the dough is well colored, we wrap it in bags and refrigerate it for about an hour to firm up.

After the dough has been in the refrigerator and has firmed up, we start shaping. We take portions of dough and form rolls, which we will join to create the stick shape. These sticks will be placed on a baking tray lined with parchment paper. It is important to ensure they are not too close together, as they will expand slightly during baking. We preheat the oven to 190 degrees Celsius and bake the sticks for 10 minutes, being careful not to let them color too much, as we want to keep that delicate and appetizing hue.
