Chicken Livers with Mushrooms (Without Carbohydrates)
The liver is a versatile and nutrient-rich ingredient, and our recipe will show you how to prepare it in a delicious and savory way. The first step is to clean the liver. Wash it well under cold running water, then let it drain in a bowl. This process is essential for removing impurities and preparing the liver for marinating.
After the liver has drained, squeeze two lemons, and pour the obtained juice over the liver. Cover the bowl with plastic wrap and let it marinate for about 3 hours. This step will not only help eliminate toxins from the liver but will also provide a creamier texture, preparing it for cooking. The tangy aroma of lemon will blend perfectly with the other ingredients.
After 3 hours, remove the liver from the lemon juice and rinse it well under cold water to remove excess acidity. Now, let's take care of the kaizer. Cut it into cubes and place it in a well-heated pan. Sear the kaizer on all sides until it becomes crispy and golden, then remove it from the pan and set it aside. The fat left in the pan will add extra flavor to the liver.
Next, add the liver to the pan. If you have more livers than the pan can hold, fry them in batches so that each piece browns evenly, achieving a delicious brown tone. Once the livers are ready, remove them from the pan and set them aside.
In the same pan, add the mushrooms, finely chopped onion, and crushed garlic. Sprinkle in coriander and cumin, mixing everything well. Let the ingredients sauté over medium heat for 10-15 minutes until the mushrooms become tender and the onion turns translucent. Then, pour in a tablespoon of white wine, allowing the flavors to combine and develop.
Once the alcohol has evaporated, add the kaizer and liver back into the pan, gently stirring to combine all the ingredients. They will blend together, and the flavors will intensify.
For serving, use fresh lettuce leaves as a garnish, on which you will place the liver, mushroom, and kaizer mixture. This will not only add a crunchy note but will also perfectly complement the tangy taste of the liver. Enjoy!
