Ricotta and Chocolate Muffins
To prepare the most delicious ricotta and chocolate muffins, we start by gathering the necessary ingredients. Make sure you have everything at hand to avoid wasting time during the cooking process. In a large bowl, we combine the sugar with the eggs. Using an electric mixer, we mix the two ingredients on medium speed until we achieve a fluffy, light-colored mixture. This step is essential, as the air incorporated at this stage will contribute to the muffins' fluffy texture.
Once we have achieved an airy texture, we add the ricotta. It is important to ensure that the cheese is well incorporated into the mixture so that the muffins come out tender and moist. We continue by adding the oil, salt, baking powder, and the grated zest of a lemon. The lemon zest will add a fresh note and an inviting aroma, making the muffins even more appealing.
After we have integrated all these ingredients, we begin to add the flour, one cup at a time, mixing constantly to avoid lumps. It is important not to overmix, as we want to maintain the fluffy texture of the batter. Finally, we add the chocolate pieces. You can use dark, milk, or white chocolate, depending on your preferences. The chocolate will melt slightly in the oven, giving the muffins a delicious flavor.
Once the mixture is well blended, we prepare the muffin tray. It should be special, with molds to give them a perfect shape. We place paper liners in each mold and fill them halfway with the prepared mixture. It is essential not to fill the molds to the brim, as the muffins will rise during baking.
We preheat the oven to 180 degrees Celsius and place the tray inside. We let the muffins bake for about 20-25 minutes, or until they acquire a beautiful golden color and a slightly crispy crust. You can check if they are baked by inserting a toothpick into the middle of a muffin; if it comes out clean, they are ready.
Once the muffins are baked, we let them cool in the tray for a few minutes before transferring them to a cooling rack. They are served cool, and the aroma of lemon and chocolate will immediately captivate you. Enjoy these delights alongside a cup of coffee or tea for a perfect indulgence moment!
