To prepare these delicious croissants, start by melting the butter in a bain-marie, an essential process that guarantees a perfect texture. Make sure not to let the butter boil, but to melt it slowly. Once melted, let it cool slightly so it doesn't affect the dough when you mix it. It's important to note that if you choose to melt the butter directly over the flame or in the microwave, the dough will have a different consistency, which may affect the final result of the recipe.

In a large bowl, add the sifted flour along with the baking powder and salt, mixing them well to avoid clumping. Then, add the yogurt and melted butter, mixing everything with a spatula or your hands until you obtain a homogeneous dough. If you notice that the dough is too soft, don't hesitate to add one or two tablespoons of flour to bring it to the desired consistency. It is essential to use the dough immediately, as it should not sit, otherwise it will suffer texture changes.

Place the dough on a lightly floured work surface and roll it out into a round sheet about 0.5 cm thick. Using a pastry wheel or a sharp knife, cut the circle into 8 equal triangles. At the base of each triangle, add a teaspoon of your favorite filling. Roll each triangle from the wider base to its tip, thus forming the croissants.

After you finish rolling the croissants, carefully transfer them to a baking tray lined with parchment paper. Preheat the oven to 180 degrees Celsius and place the tray inside, allowing the croissants to bake for about 15-20 minutes. They will be ready when they become slightly golden, and their aroma will fill the entire room.

Once you take them out of the oven, roll the hot croissants in vanilla powdered sugar to give them an attractive appearance and a sweet taste. These croissants are delicious both warm and cold, offering a pleasant culinary experience at any time of the day. Enjoy them with a cup of tea or coffee, and each bite will be a true delight!
