Number of servings: 10-12
Necessary ingredients:
*For the base:*
- 6 eggs
- 6 tablespoons raw sugar
- 6 tablespoons flour
- 2 tablespoons sunflower oil
- 1 tablespoon Dr. Oetker baking powder
- 1 packet Dr. Oetker Bourbon vanilla
- A pinch of salt
- A drop of Dr. Oetker red gel food coloring (for decoration)
*For the cream:*
- 500 g whipped cream (35% fat)
- 3 egg yolks
- 150 g Dr. Oetker vanilla-flavored powdered sugar
- 1 packet Dr. Oetker gelatin granules
- 50 ml water or syrup from canned fruit
*For the fruit filling:*
- 5-6 large strawberries
- 2-3 halves of canned peaches
- 1 mandarin
*For decoration:*
- Dr. Oetker dark chocolate glaze
- Dr. Oetker colorful confetti
Preparing the base:
1. Separate the eggs: Start by separating the egg whites from the yolks. It is essential that the bowls are completely dry to achieve a perfect meringue.
2. Beat the egg whites: In a bowl, add a pinch of salt to the egg whites and mix for about 1 minute, until frothy. Then, gradually add the raw sugar, continuing to mix until you obtain a firm and shiny meringue.
3. Incorporate the yolks: Add the yolks one at a time, mixing well after each addition. Then, add the oil and vanilla essence, mixing until well combined.
4. Add the flour: In another bowl, mix the flour with the baking powder, then incorporate this mixture into the wet ingredients. Use a spatula and gently fold to avoid losing air from the egg whites.
5. Red decorator: Set aside 3 tablespoons of the base mixture. Add a little red gel food coloring and mix well. Place this mixture in a plastic bag, cut off a corner, and use it to make decorations on a baking sheet lined with parchment paper. Bake at 165 degrees Celsius for 3-4 minutes until slightly firm.
6. Bake the base: Pour the remaining base mixture over the baked decorations and bake for 20 minutes. Once baked, remove the base onto a damp towel to prevent drying, remove the parchment paper, and roll it in the damp towel. Allow to cool.
Preparing the cream:
1. Egg yolk cream: In a bowl, mix the yolks with half of the powdered sugar until it becomes a light-colored cream.
2. Hydrate the gelatin: In another container, soak the gelatin in water or fruit syrup. Once hydrated, add it to the yolk mixture and place the bowl over a double boiler. Stir constantly for 10-15 minutes until the sugar completely dissolves. Allow to cool, but do not let it set.
3. Whip the cream: In another bowl, whip the cream with the remaining sugar until you achieve a firm consistency. Add the yolk cream and gently mix to combine the ingredients. Chill for 15-20 minutes.
Assembling the roll:
1. Prepare the fruits: Cut the strawberries, peaches, and mandarin into small cubes. Place them in a strainer to drain excess liquid.
2. Spread the base: Place the base on a piece of plastic wrap, with the red pattern facing down.
3. Add the cream: Spread the cream evenly over the base using a spatula. Then, sprinkle the fruit cubes on top.
4. Roll it up: Using the plastic wrap, roll the base, being careful to tighten it gently to avoid breaking. Wrap the roll in plastic wrap and refrigerate for 5-6 hours, ideally overnight.
Decorating the roll:
1. Glaze: For a simple and effective decoration, heat the Dr. Oetker glaze in the microwave for 1-2 minutes. Cut a corner of the packet and decorate the roll with the melted glaze.
2. Confetti: Sprinkle colorful confetti on top for a festive and colorful look.
