Spicy Tomato Sauce for Sautéed Vegetables
Ingredients: -1 kg tomatoes -2-3 tablespoons olive oil -1-2 bunches of fresh parsley -1-2 tablespoons apple cider vinegar or lemon juice -salt
To prepare a delicious tomato sauce, we start by preparing the necessary ingredients. Choose well-ripened tomatoes, preferably from the garden or market, as their flavor will make a difference. Wash them well and, using a sharp knife, make a small cross incision on the bottom of each tomato. Then, place them in a pot of boiling water for about 30 seconds. This blanching method will make it easier to remove the skin. After the tomatoes have been blanched, remove them from the water and immediately place them in a bowl of cold water to stop the cooking process. Once cooled, carefully peel off the skin and cut them into equal-sized cubes so that they cook evenly.
In a deep pan, add a few tablespoons of extra virgin olive oil, which will add a rich flavor to the sauce. Heat the oil over medium heat, then add the tomato cubes. It is important to stir constantly to prevent them from sticking to the bottom of the pan. Let the tomatoes simmer for about 15-20 minutes, until the liquid reduces and the sauce thickens. This process will concentrate the flavors and turn the tomatoes into a delicious sauce.
When the sauce starts to thicken, add a few tablespoons of freshly chopped parsley. This will bring an extra freshness and will complement the sauce's flavor. Depending on your preferences, you can also add a splash of chopped or fried garlic for a more intense taste. Finally, drizzle the sauce with a little apple cider vinegar or, alternatively, lemon juice, to give it a hint of acidity that will balance the sweetness of the tomatoes. Don't forget to season the sauce with salt, tasting along the way, to achieve a perfect flavor.
