If you are looking for a quick and tasty recipe, stuffed squid is the perfect choice. This recipe will not only delight your taste buds but also add a touch of elegance to your plate. Here’s how you can prepare this special dish, step by step.

Ingredients:
- 2 pieces of frozen squid (approximately 300 g)
- 150 g of rice (preferably risotto rice)
- 1 small onion, finely chopped
- 2 cloves of garlic, chopped
- 100 g of cherry tomatoes, halved
- 50 g of black olives, sliced
- 50 g of feta cheese, crumbled
- 1 tablespoon of fresh parsley, chopped
- 1 tablespoon of olive oil
- Salt and pepper, to taste
- 1 lemon, for serving

Step 1: Preparing the squid
Start by blanching the two pieces of frozen squid. Place them in a pot of boiling water and let them boil for 5 minutes. This step will help soften the squid and transform it into tender tubes. After boiling, remove them from the water and let them cool slightly.

Step 2: Preparing the filling
In a pan, add the olive oil and sauté the chopped onion over medium heat until it becomes translucent. Add the garlic and continue to cook for another minute, being careful not to burn it. Add the rice and mix well, allowing it to sauté lightly for 2-3 minutes. This step will enhance the flavors.

Step 3: Cooking the filling
Slowly add water or vegetable broth (approximately 400 ml) and let the rice boil, stirring occasionally, for about 15 minutes, or until it is almost cooked. When the rice is nearly done, add the cherry tomatoes, olives, and feta cheese. Mix well and season with salt and pepper to taste. Finally, add the chopped fresh parsley.

Step 4: Stuffing the squid
Using a spoon or a piping bag, fill each squid tube with the rice mixture. Be careful not to overfill, as the squid will puff up during cooking. Make sure the filling is evenly distributed.

Step 5: Cooking the stuffed squid
Preheat the oven to 180 degrees Celsius. Place the stuffed squid in a baking dish and cover with aluminum foil. Bake for 20 minutes. At the end, remove the foil and let it brown for 5-10 minutes.

Step 6: Serving
Remove the squid from the oven and let it rest for a few minutes. Serve it warm, drizzled with fresh lemon juice, alongside a green salad or a side of grilled vegetables. This dish pairs perfectly with a dry white wine that will highlight the delicious flavors of the stuffed squid.

Personalized version:
If you want to bring a touch of originality, you can replace the rice with quinoa or bulgur for a healthier option. Additionally, adding spices such as paprika or cumin to the filling can provide an extra flavor boost.

I hope this stuffed squid recipe becomes one of your favorites. Enjoy every bite and savor the moment!
