Ingredients:
- 250 g mushrooms (choose fresh mushrooms, such as champignon or porcini for a more intense flavor)
- 100 g butter
- 4 tablespoons of flour
- 1 cup of milk (the idea is to use fresh, whole milk for a creamier pudding)
- 100 g cheese (you can use smoked cheese for a stronger taste)
- 4 eggs
- A bunch of dill (fresh, for a vibrant aroma)
- A bunch of parsley (optional, but adds a fresh note)
- Salt and pepper, to taste

Preparation:

1. Start by preparing the mushrooms. Wash them well in several waters to ensure they are clean. Remove the stems and cut the mushrooms into small cubes. This step is essential to ensure the mushrooms cook evenly.

2. In a large skillet, melt the butter over medium heat. Add the flour and mix well to form a roux, cooking for 1-2 minutes to eliminate the flour taste. Make sure it doesn’t brown too much.

3. Begin to add the milk gradually, stirring constantly with a wooden spoon. Continue adding the milk until the mixture becomes homogeneous and smooth. This is the base of the pudding, so pay attention to the consistency.

4. Once the sauce is ready, remove it from the heat and add the chopped mushrooms, drained juice, dill, and finely chopped parsley, along with salt and pepper to taste. Mix well and let the mixture cool.

5. Separate the egg yolks from the whites. When the mushroom mixture has cooled, add the yolks and grated cheese. Mix well to integrate all the ingredients.

6. Whip the egg whites until stiff, then gently fold them into the mushroom mixture using a spatula or whisk. This step will make the pudding fluffy and airy.

7. Preheat the oven to 180°C. Pour the mixture into a baking dish and place it in a larger tray filled with hot water (bain-marie). This trick will ensure even baking and prevent the pudding from drying out.

8. Let the pudding bake for about 30-40 minutes or until well set and has a slightly golden crust on the surface. Check with a toothpick – if it comes out clean, the pudding is ready!

9. Remove the pudding from the oven and let it cool for a few minutes. It is delicious served warm, but you can also try serving it at room temperature.
