1. Preparing the fish: Start by cleaning and thoroughly washing the salmon trimmings. Place all the pieces in a clean piece of cheesecloth, gathering the edges to form a pouch. Then, add the pouch to a pot of boiling water. Make sure the piece of cheesecloth is long enough to remain outside the water. Let it simmer on low heat for 10 minutes.
