Suberek
In a generous bowl, flour, salt, and oil are combined. These ingredients are essential for creating a perfect dough, which will form the base of the delicious dishes we will prepare. We start by gradually adding warm water, constantly mixing until we obtain a dough that is neither too hard nor too soft, with a slightly elastic texture. Once the dough is well combined, we let it rest for about 15 minutes, allowing the gluten to develop and making the dough easier to roll out.
Meanwhile, we take care of the filling. The onion is finely chopped and then sautéed in two tablespoons of heated oil until it becomes translucent and releases its aroma. We add the minced meat, season with salt and pepper, and then mix well. It is important to cook the meat until it loses its juices, and the mixture becomes denser and more flavorful. When the filling is ready, we let it cool for a few minutes, after which we add a beaten egg, which will help bind the ingredients and provide a pleasant texture.
After the dough has had time to rest, we sprinkle a little flour on the work surface and turn out the dough. We roll it out with a rolling pin, obtaining a sheet about 4-5 mm thick. If we don’t have a special mold at hand, we can use a glass or just our hands to form round balls, which we then roll out into circles. Each circle will be filled with a teaspoon of the prepared mixture, and then the edges are carefully sealed, ensuring that the filling does not leak out during frying.
To cook them, we heat oil in a deep pan until it reaches an optimal temperature. We fry each dumpling on both sides until they become golden and crispy. Once they are ready, we remove them to a plate lined with absorbent paper to remove the excess oil. These delights can be served hot or cold, being just as tasty regardless of when we choose to enjoy them. The flavors blend wonderfully, and each bite will be an explosion of tastes, perfect for a snack, a lunch meal, or an appetizer at a party. Enjoy your meal!
