Caramelized Onions with Mushrooms:
- 1 white onion
- 1 red onion
- 1 jar of drained mushrooms
- 3 tablespoons olive oil
- 1 teaspoon salt
- ¼ teaspoon freshly ground pepper
- ½ teaspoon dried oregano
- 2 sprigs of thyme
- 1 clove garlic, minced
For serving:
- 12 waffle ice cream cones

Preparing the dough:
1. In a bowl, mix 1 tablespoon of olive oil with the yeast, sugar, salt, and a little warm water. Let this mixture sit in a warm place for about 10 minutes until it starts to foam.
2. In a larger bowl, place the sifted flour and make a well in the center. Pour in the yeast mixture and the remaining oil. Gently mix with a fork, gradually incorporating the flour. When you have a soft dough, let it rise for another 10 minutes.
3. Gradually add the remaining water and start kneading the dough until it becomes elastic, smooth, and easily pulls away from the sides of the bowl.
4. Turn the dough onto a floured surface and knead well for about 10 minutes. Shape it into a ball and place it in a bowl. Cover with plastic wrap and let it rise in a warm place for 50-60 minutes, or until it doubles in size.
5. Once risen, turn the dough onto a floured work surface. Form a thick roll and cut it into pieces about 10 cm each. From the remaining dough, you can make a large pizza if you wish.
6. Shape each piece of dough between your palms until you get tennis ball-sized shapes. Brush them lightly with olive oil, cover with a towel, and let them rise for another 40 minutes.
Preparing the filling:

2. Add the sugar, pepper, oregano, and thyme, and sauté for another 1-2 minutes until the sugar melts. Pour in water and let it simmer on low heat for 5-8 minutes until the liquid evaporates. The onions should become sticky.
3. Add the drained mushrooms and cook for 10 minutes until the mixture thickens and has no liquid left. Then, remove the skillet from heat.
Preparing the cones:
1. Tear off a piece of aluminum foil and place a waffle cone on one corner. Roll the foil tightly around the cone, flattening the ends well.
2. Repeat the process for the 12 cones and set them aside.
3. Generously spray the aluminum foil with olive oil. Roll each piece of dough into a thin sheet and place a wrapped cone on one side. Gently roll the dough to fully wrap the cone and press lightly at the end to seal.
