- 1 kg potatoes (choose red or white potatoes that hold up well during cooking)
- 200 g telemea cheese or feta cheese

- 2 tablespoons olive oil

Preparation:
1. Boiling the potatoes: Start by washing the potatoes well under cold water. Place them in a large pot with salted water and let them boil for 10-15 minutes, or until they become slightly soft, but not fully cooked. The goal is to be able to slice them without falling apart. After boiling, drain the water and let them cool slightly.
2. Slicing the potatoes: Once the potatoes have cooled, slice them into approximately 5 mm thick slices. This thickness will allow the potatoes to cook evenly and absorb the flavors from the cheeses.
3. Preparing the egg and sour cream mixture: In a large bowl, beat the eggs with the sour cream. Add salt and pepper to taste. If you want a richer flavor, you can add the grated cheese to this mixture.
4. Assembling the dish: Preheat the oven to 180 degrees Celsius. Grease a baking dish with olive oil. Place a layer of potato slices on the bottom of the dish, followed by a layer of crumbled telemea or feta cheese. Continue alternating layers until you finish all the ingredients, making sure to finish with a layer of potatoes.
5. Pouring the egg mixture: After you have finished layering all the ingredients, pour the egg and sour cream mixture evenly over everything. This will help bind the dish together, giving it a creamy texture.
