2. Mashing the potatoes: After the potatoes are boiled, drain them and let them cool slightly. Then, peel them and mash them as for a puree. Make sure there are no large chunks left to achieve a uniform mixture.
3. Mixing the ingredients: In a large bowl, add the potato puree, beaten eggs, crumbled telemea cheese, and flour. Season with salt and pepper to taste. Mix all the ingredients well until a homogeneous dough forms.
