Fish Rolls – A Delicious and Healthy Recipe

There are moments in life when food becomes a celebration, and fish rolls are certainly one of those delicacies that can transform an ordinary meal into a memorable feast. This dish, rich in flavors and healthy, is part of the culinary tradition of many cultures. Whether it’s a family meal or a dinner with friends, fish rolls are an excellent choice that will impress everyone. In this recipe, we will explore step by step how to prepare fish rolls, providing useful tips to achieve the best results.

Total preparation time: 2 hours
Number of servings: 6

Ingredients:
- 500 g fish fillet (I used bream and red mullet, but you can use other types of white fish)
- 2 large onions
- 1 large carrot
- 1 yellow bell pepper
- 1 red bell pepper
- 2 large tomatoes
- 150 ml tomato juice
- 1 bunch of fresh parsley, chopped
- 150 g rice
- 3 - 5 tablespoons oil
- 50 g breadcrumbs or corn flour (to bind the mixture)
- Salt and pepper, to taste
- Pickled cabbage leaves (pickled 3 weeks in advance)
- Horseradish leaves (optional)
- Grape leaves (optional)
- 5 small red mullets + baking paper + lemon slices
- 1 smoked mackerel (for a special flavor)

Preparation:

1. Preparing the vegetables: Start by washing and peeling all the vegetables. Finely chop the onion, carrot, yellow bell pepper, and red bell pepper. These vegetables will add freshness and flavor to your rolls.

2. Sautéing the vegetables: In a large pot, add the oil and heat it over medium heat. Once the oil is hot, add the chopped onion and carrot. Sauté for about 3 minutes until they become translucent. Then, add the rice and tomato juice. Let everything simmer together for another 5 minutes, stirring occasionally.

3. Preparing the mixture: In a large bowl, place the chopped fish and add the sautéed vegetable mixture. Add the chopped parsley, salt, pepper, and breadcrumbs or corn flour. Mix well until all ingredients are uniform. This step is essential to ensure a homogeneous mixture that will hold together well when cooked.

4. Forming the rolls: Now comes the fun part! Take the pickled cabbage leaves and place a tablespoon of the fish mixture in the center of each leaf. Fold the edges of the leaf and roll them up to form rolls. Make sure they are well sealed so that the filling does not spill out during cooking.

5. Preparing the fish: Clean the 5 small red mullets. Season them with salt and fill them with lemon slices. Wrap each fish in baking paper. This technique not only keeps the fish juicy but also adds a subtle flavor.

6. Assembling the rolls: In the pot where you will boil the rolls, place a layer of chopped pickled cabbage. Arrange the wrapped fish at the bottom of the pot, then add the rolls. Between the rolls, you can add pieces of smoked mackerel, which will bring a special smoky flavor.

7. Boiling: Cover everything with pickled cabbage leaves, add 3-4 tablespoons of oil and fill with water until everything is covered. Place the pot over medium heat and let it boil for about 1 hour and 30 minutes. It is important to check occasionally to ensure that the rolls do not stick to the bottom of the pot.

8. Serving: Fish rolls are delicious both warm and cold. You can choose to serve them with a slice of fresh bread or warm polenta. A garlic or spicy pepper paste adds extra flavor, and a glass of white wine pairs perfectly with this dish.

Useful tips:
- If you want a spicier taste, you can add a bit of paprika to the fish mixture.
- Use fresh fish for the best results. Frozen fish can change the texture of the rolls.
- Experiment with different types of fish to find the combination you like best.

Nutritional benefits:
Fish rolls are a healthy option, rich in protein and omega-3 fatty acids, essential for heart health. The vegetables add fiber and vitamins, and using rice as the main ingredient makes this recipe a hearty meal.

Frequently asked questions:

2. How can I make the rolls spicier?
