Delicious Moldovan Sfintișori Recipe

Introduction:
Moldovan Sfintișori are a traditional delicacy, rich in flavor and family stories. This ancient recipe has been passed down through generations, and today, I invite you to discover and prepare it with your heart, bringing tradition closer to you. Every year, during the celebration of the Forty Martyrs, my family gathers to celebrate with these treats. Although this year I won't be with my mother, I will prepare Sfintișori for the first time on my own, following the same well-preserved recipe from my grandmother.

Preparation Time:
- Preparation time: 30 minutes
- Rising time: 1 hour
- Baking time: 25-30 minutes
- Total time: approximately 2 hours
- Number of servings: about 3 baking trays

Ingredients:
For the dough:
- 1 kg wheat flour
- 4 eggs
- 300 g sugar
- 200 g margarine
- Grated zest of one lemon
- Grated zest of one orange
- 200 ml milk (or more, as needed)
- Yeast (about the size of a walnut)
- 1 teaspoon salt

For decoration:
- 5 tablespoons honey
- Ground walnuts (to taste)
- Sugar (to taste)
- 2 eggs (for brushing)

Preparation:
1. Preparing the ingredients: Start by gathering all necessary ingredients. Ensure that the milk and margarine are at room temperature for easier mixing.

2. Melting the margarine: In a saucepan, combine the margarine and milk, melting them over low heat while stirring constantly until you achieve a smooth mixture. It is important not to bring the mixture to a boil, just melt it.

3. Activating the yeast: In a small bowl, dissolve the yeast in a little warm milk (about 50 ml) and let it sit for 10 minutes. This will activate the yeast and help the dough rise.

4. Preparing the dough: In a large bowl, combine the flour, sugar, salt, lemon, and orange zest. Add the eggs and mix well. Gradually pour in the milk and margarine mixture, then add the activated yeast. Knead the dough with your hands until it becomes soft and elastic. If it is too sticky, add a little more flour, but be careful not to dry out the dough.

5. Rising the dough: Cover the bowl with a clean towel and place it in a warm spot for about 1 hour, or until the dough doubles in volume. This is when the magic happens!

6. Preparing the filling: In another bowl, mix the ground walnuts with sugar. This will be the aromatic filling for the Sfintișori.

7. Shaping the Sfintișori: Once the dough has risen, take a piece of dough and shape it into a ball or specific figures, such as eights or spirals, as you like. Fill each shape with the walnut and sugar mixture, folding the dough so that the filling is well sealed inside.

8. Preparing for baking: Place the Sfintișori on a baking tray lined with parchment paper. Beat the two eggs to create a smooth mixture and brush each Sfintișor with it. Sprinkle sugar on top for a sweet taste and a crispy crust.

9. Baking: Preheat the oven to 180°C and bake the Sfintișori for 25-30 minutes, or until they turn golden and fluffy. This is the perfect time to fill your home with the divine aroma of sweet bread and roasted nuts!

10. Glazing: Once the Sfintișori are ready, melt the honey in a double boiler. As soon as you take them out of the oven, quickly dip the top in warm honey and then coat with ground walnuts. Arrange them nicely on a platter and let them cool.

Useful tips:
- For a more intense flavor and aroma, you can add a splash of rum or vanilla essence to the dough.
- If you want a healthier option, you can replace sugar with honey in the filling.
- Make sure to use fresh nuts, as they will add a special flavor to the Sfintișori.

Nutritional benefits:
Sfintișori are a good source of carbohydrates from flour, as well as protein from eggs and walnuts. Walnuts are rich in omega-3 fatty acids, which are essential for heart health.

Frequently asked questions:
1. Can I use other types of nuts? Yes, you can replace walnuts with almonds or hazelnuts, depending on your preferences.
2. How can I keep Sfintișori fresh? You can keep them in an airtight container at room temperature for a few days. If you want to keep them longer, you can freeze them.
3. What are the best drinks to serve with Sfintișori? They pair wonderfully with a warm herbal tea or a spiced mulled wine.

Serving suggestions:
Sfintișori are delicious warm, but can also be enjoyed cold. You can serve them alongside a scoop of vanilla ice cream or with a spoonful of sweet cream for a perfect contrast.

Personalized option:
If you want to bring a touch of innovation to the recipe, you can add dark chocolate pieces to the walnut filling for a decadent note. Or, for a less sweet option, you can add aromatic herbs like rosemary to the dough.
